Adopting Shirley of Gluten-Free Easily (Chicken Enchilada Casserole)

I had a dream. No. Not the cool, Martin Luther King, Jr. kind of I Have a Dream. Just a regular ol’ run-of-the-mill dream. But, I do like the fact that I think about that speech every time I hear the phrase, “I had a dream.” Anyway… I was working downstairs in our basement (that’s […]

My Fabulous Gluten-Free Birthday, Part Two

So, here is part two of our getaway. I’ll just jump right in. After getting all of the fabulous opinions, we headed off on our journey. We made an appointment with Vincent Arroyo Winery for 12:30pm, but on the way, we got stuck behind a painting truck. The kind that paints the stripes on the […]

My Fabulous Gluten Free Birthday

Shhhh. Don’t tell the Big Man that I put a picture of him on here. Well, it came. No matter how much we all wish it wouldn’t. It finally came for me. And it wasn’t so bad. Especially because I made sure it came with style. And fun. And lots of great food and […]

Welcome to the July Edition of Adopt a Gluten-Free Blogger! No. I am not Sea, which I am guessing you have figured out since you are not on her blog site, Book of Yum. I am Tia, which I am also hoping you have figured out since you are on my blog site. Sea is […]

More Chocolate Cake! (Zucchini Muffins?)

I lied to my son. It was minor, and it was to get him to try something good for him, but it was still a lie. I don’t feel very good about it. A lie is a lie, and I don’t want to start down that road. Each lie gets a little bit bigger until […]

Cooking Became Easier, and More Fun, When I Learned [...]

While perusing facebook the other day, I came across a challenge thrown up by Gluten-Free Girl. I am always up for a challenge, and this one seemed fun. Shauna (Gluten-Free Girl) challenged us to write a blog post by Monday (7-5-10) night finishing the sentence, “Cooking became easier, and more fun, when I learned [...]” I had to think for a minute because I have always loved to cook, when I have the time. But I have always been the kind of person to stick with a few recipes and repeat them over and over. Once I found out I couldn’t eat gluten, some of those recipes had to go. That’s ok. They weren’t very healthy for me anyway. So, I thought about it. I thought, and thought, and thought about it. And here is what I came up with.

Gluten Free Zucchini Muffins

**Kelly from The Spunky Coconut is doing a Spunky Holiday for Easter, so I am linking this recipe to that. It is going to be a great round up pf Easter recipes. I was going to do a post on how my mom and I used to color Easter Eggs, but then I got sick. […]

Ten Things Gluten Free (Started by Lissy)

While checking in on twitter the other day, I had a DM waiting for me. (For those who don’t use twitter, it means Direct Message, as opposed to a tweet. Only I could see it.) It was from Lissy at glutenfreelissy.com. She thought it would be fun to try and spread a meme around about being gluten free. I agreed, and so here are my answers. Please feel free to answer them yourself on your own blog and spread it around. Just for kicks!
