I hope you had a great vacation. I read Kim&#039;s post, so I know where you went. Oooo. That sounded all stalker-ish. Anyway, I used to live in Carlsbad. Now that we have moved, we have to go back for Legoland. My dad is already indoctrinating our son into the Lego world. But that&#039;s ok.

Can&#039;t wait to try more of your recipes.

		<description>Thank you! I had a fun time doing it. The casserole was amazing. I think it was better then getting an enchilada from our Mexican place, and chicken enchiladas are my favorite. Plus, I know what is in this. And the beet salad is really good. My husband really likes beets, so he is very happy that I&#039;m coming around. I really have to dig out my food processor, though. Our kitchen is always very purple afterward.

Enough about me, Shirley is just the best and so are her recipes, I have made several so far and they have been awesome.  I made Shirley&#039;s chocolate zucchini bread before we left for vacation and I almost had to beat Luke away with a stick, he loved it so much.

I am also brewing Shirley&#039;s homemade vanilla extract as we speak and I have made a few more.  Think I will adopt her next month (and you and Kim and Carrie)! :0)

That beet salad looks awesome as well! Heidi actually told me about it when they were visiting and I have been meaning to make it.  I have some perfect golden beets just waiting to have something done with them!
