While perusing facebook the other day, I came across a challenge thrown up by Gluten-Free Girl. I am always up for a challenge, and this one seemed fun. Shauna (Gluten-Free Girl) challenged us to write a blog post by Monday (7-5-10) night finishing the sentence, “Cooking became easier, and more fun, when I learned […]” I had to think for a minute because I have always loved to cook, when I have the time. But I have always been the kind of person to stick with a few recipes and repeat them over and over. Once I found out I couldn’t eat gluten, some of those recipes had to go. That’s ok. They weren’t very healthy for me anyway. So, I thought about it. I thought, and thought, and thought about it. And here is what I came up with.
While checking in on twitter the other day, I had a DM waiting for me. (For those who don’t use twitter, it means Direct Message, as opposed to a tweet. Only I could see it.) It was from Lissy at glutenfreelissy.com. She thought it would be fun to try and spread a meme around about being gluten free. I agreed, and so here are my answers. The other day, I wrote a post about making Elana’s (from Elana’s Pantry) chocolate chip cookies. I said I was planning on trying the vegan/dairy free version, soon. Shirley left a comment that she tried them, but it didn’t work out too well. She thought maybe it was the Sil Pat. Well Shirley, I think you’re right. I tried the vegan/dairy free version, and they were delicious. I still can’t believe these cookie could actually be good for me. I love these cookies.

While blogging and getting to know the gluten free community, I have discovered something about myself. I’m not the greatest baker in the world. Give me time, and I’ll get it, hopefully. But, if it’s not super simple (or even if it is) it takes me a few tries. If you read my attempt at gluten/dairy free puffed pastry, you will understand what I am talking about.
So, that is why I have been looking for a gluten free baking/cooking class to take.
I’m not even sure if I can trust my memory of what happened at the conference anymore, since it has been so long now. I want to start off by apologizing. I write a series of posts and lag behind on getting the finale up in a timely manner. I guess it’s a good thing I’m not a writer for “Lost.” I don’t think I have millions of people waiting with bated breath for this post, but I do want to be fair for those readers that I do have. So, my apologies. A lot of life stuff has happened to me since the last post. I promise if I ever have a series of posts again, I will have them all written ahead of time, so I can get them up quicker. Thank you for your patience.
