While perusing Facebook the other day, I came across a challenge thrown up by Gluten-Free Girl. I am always up for a challenge, and this one seemed fun. Shauna (Gluten-Free Girl) challenged us to write a blog post by Monday (7-5-10) night finishing the sentence, “Cooking became easier, and more fun, when I learned […]” I had to think for a minute because I have always loved to cook, when I have the time. But, I have always been the kind of person to stick with a few recipes and repeat them over and over. Once I found out I couldn’t eat gluten, some of those recipes had to go. That’s ok. They weren’t very healthy for me anyway. So, I thought about it. I thought, and thought, and thought about it. And here is what I came up with.
Cooking became easier, and more fun, when I learned… that I was pregnant.
There are several reasons for this. First, the Big Man and I had talked several times about how we wanted to make sure our kids (should we choose to have any) grew up eating and liking good food. We have known too many examples of kids that were raised to eat processed and sugar-laden foods. And as adults, they had a hard time trying to eat more healthy, even thought they knew they should. We wanted our children to start out on the right foot, so to speak.
Second, I was diagnosed with gestational diabetes. I had to cut out sugar and most simple carbs. I was already gluten free, so that helped. But, I found that most stuff that we consider “bad” for us, really is. French fries sent my blood sugar way higher than a flourless chocolate cake. I thought that was interesting. In fact, if I had a few almonds, the flourless chocolate cake did nothing. I guess the protein (lots of eggs in the cake) and fat (almonds and eggs in the cake) counteract the sugar.
Third, it really is easier to change your habits when another life depends on it. I could never stop eating sugar on my own, knowing it was bad for me. But, when I had a little life inside me depending on what I put in my mouth, it wasn’t a problem. Go figure.
There is one other thing that had contributed to my change, and that is all of the wonderful people, recipes, support and ideas I have gotten from the gluten-free community. I started blogging because I was told it would be a good way to get myself out there. But what I didn’t realize was that I would get so much more in return. I have met so many wonderful people (not in real life, yet, but I hoping that will change one day.) Everyone is so supportive in my adventures of trying to figure out how to really cook and experiment with different recipes and even try to come up with my own. It is very encouraging. I don’t know if I would be having as much fun without it. I look forward to taking pictures of my creations (be they from my head or someone else’s) and putting them up online with a story about them. Then, I get comments and reactions from people. It is wonderful.
