Italian Chicken Stew (Naturally Gluten Free)

This wonderful and easy chicken stew recipe is naturally gluten free and really, really good.
Ingredients
  • 3 tablespoons Olive Oil
  • 8 - 9 cloves Garlic (chopped)
  • 1 Onion (chopped)
  • Large Chicken Breasts (boneless and skinless)
  • 6 Mushrooms (chopped)
  • 1 tablespoon Oregano
  • 1 tablespoon Thyme
  • 1 tablespoon Basil
  • ¼ cup Red Wine
  • 28 oz cans Crushed Tomatoes
  • 1 bunch Parsley (rinsed and chopped)
  • 1 bunch Chard (rinsed and chopped)
Instructions
  1. If you have everything chopped and ready ahead of time, it makes it much easier. In a large pan, saute garlic and onions in the olive oil until tender.
  2. Add chicken.
  3. Cook until starting to brown.
  4. Add mushrooms, oregano, basil, thyme.
  5. Cover and simmer for 5 minutes.
  6. Drain any juice that is there.
  7. Add wine and stir a bit.
  8. Add tomatoes.
  9. Cover and simmer for 5 minutes.
  10. Add parsley and chard.
  11. Cover and simmer for 5 minutes.
  12. Top with shaved Parmesan cheese. And enjoy!
