Shirley is the best. So are so many other people I have come across in the gf blogging world. I am just amazed at how wonderful people can be. Even though I am a butter lover, I think I like the vegan ones better. I could live off of them, I swear. BTW, I really like your idea of the gluten free meals in under 20 minutes. I have been noting quite a few of them to try in the future. A great idea about having a month of guest posts. Also, my MIL is from North Carolina. Beautiful place.
