St. Valentine’s Day is here. How are you going to celebrate?

I’ll tell you how I am going to celebrate. I am going to celebrate by being grateful for all of my loved ones.

You see, this post is going to be a tad different from my funny story posts because…

Well, because a friend of our family had a horrible accident happen to her husband, and it made me grateful for the health of my family.

About a week ago, he fell off the roof of their home and has been in ICU ever since. He is slowly getting better, but it is going to be a long hard road. I can’t even imagine what they are going through right now. They just got married last September. At the beginning of the day, he is healthy, and they are happy as can be. By the end of the day, he’s in the hospital.

So, even though St. Valentine’s Day is a holiday that was invented by the greeting card companies to get your money (as my MIL loves to tell us), this year I am going to spend it being grateful for my loved ones. All of the family and friends that I am blessed to call my loved ones. I am going to be grateful that I can watch the Little Man and the Big Man run around and play (even though they are a little slow about it, getting over this stupid cold).

I did make a recipe this week because I wanted to take something over to our friend so I could make sure she ate something. It is just another muffin recipe. A flavor I have wanted to try for a while. It turned out quite nice, so I hope you enjoy it, if you choose to make it.

In the meantime, I implore you to spend this holiday looking around at what really matters. If you want to spend the money on cards, chocolates and diamonds, please do. But if you don’t want to… Don’t! If St. Valentine’s Day is about LOVE, let it be about LOVE.

Do what you love!

Go to a place you love!

Spend time with someone you love!

Let this day be about love, not things. (Sorry. Another rant because I can’t stand the consumerism of this day. Please forgive me.)

Anyway, on to the Gluten-Free Apple Crumb Muffins.

Also, there aren’t many St. Valentine’s Day Cartoons from my childhood, but I loved Be My Valentine, Charlie Brown. I especially loved the part where Snoopy made the super fancy Valentine.

They are pretty good. I need to make them again. And, he is ding better. Had to go home to his parents house because he needs 24/7 care right now but getting better. Thanks.

  2. Oh I’m so sorry for your friend and her husband Tia. I hope he fully recovers.

On a bright note, that is my favorite kind of muffin and I love that you made it with almond flour!

Guess you and Diane are alike. They worked out really nicely. I was pleasantly surprised.

My best friend from college lost her husband in an accident on vacation years ago when our kids were still small. It happens so quickly-just a reminder to cherish our loves everyday and not just on holidays. Making them your muffins might be a good way to show our love and appreciation. After tasting your muffins in SFO last fall, I’m a believer in your muffin abilities.

I can’t even imagine. Your poor friend. How awful. Yep, it just makes me so grateful for who I have.

I’m glad my muffins have abilities. I just wish they had the ability to do the laundry. Then they would be perfect. 😉

  4. Tia, I am feeling so sad right now for your friend and her family! I am sending her husband positive healing vibes. I know what it is like to lose someone in an instant – my Dad died very suddenly and without warning a few years ago, and it just makes you realize how precious the people in your life really really are.
I loved this post. YOu are forgiven for your brief departure from your usual humor. I agree today is all about spending time with the people you love…not about things. Tonight, my husband’s parents, sis, and our nephew are all coming over and we are cooking up some King Crab Legs and Prime Rib and hanging out together! We do not get each other things today (although, I did cheat and bought Kurt a new grill brush for his new big fancy grill – so romantic, I know).
    Have a happy Spending-Time-Together-Day!!

Well, your vibes must be working, thank you. And, he is doing better. Had to go home to his parents house because he needs 24/7 care right now but getting better.

I didn’t know that about your father. I knew you lost him, but I didn’t know how. I’m so sorry. I’m a daddy’s girl, so I can’t even imagine.

King crab legs and prime rib?! Now that is my idea of a good time. We all need teleportation devices to send this food to each other when we make it. Or at least, when you make it and then I can get it. 😉 And I think the anti-things gods will forgive your indiscretion. 😉

  5. Yes, nothing much really matters as much as good health and love. That’s really what life boils down to, I think.

Your muffins look delicious and I bet your friend appreciated it. I hope that he recovers quickly and that their lives are back to normal in no time.

    xoxo, E

Thanks, Ellen. I used to be so whoa-is-me, but my life has been so blessed lately that I just can’t help but wake up grateful everyday. Plus, life is just better in general if you look at the bright side.

And, he is doing better. Had to go home to his parents house because he needs 24/7 care right now but getting better. Thanks.

Live for the day. Remember to smile – and – yes – remember to do things that you love and tell people that you love them – often. Life is short. Your friends are lucky to have you baking such yummy muffins for them! N xo

  7. Tia – so sorry about your friend’s husband. Wishing him a full recovery. You are so right–it’s important to cherish the ones we love.

I just got my first order of Honeyville almond flour and have been wondering what to make with it–these muffins sound perfect.
