St. Valentine’s Day is here. How are you going to celebrate?
I’ll tell you how I am going to celebrate. I am going to celebrate by being grateful for all of my loved ones.
You see, this post is going to be a tad different from my funny story posts because…
Well, because a friend of our family had a horrible accident happen to her husband, and it made me grateful for the health of my family.
About a week ago, he fell off the roof of their home and has been in ICU ever since. He is slowly getting better, but it is going to be a long hard road. I can’t even imagine what they are going through right now. They just got married last September. At the beginning of the day, he is healthy, and they are happy as can be. By the end of the day, he’s in the hospital.
So, even though St. Valentine’s Day is a holiday that was invented by the greeting card companies to get your money (as my MIL loves to tell us), this year I am going to spend it being grateful for my loved ones. All of the family and friends that I am blessed to call my loved ones. I am going to be grateful that I can watch the Little Man and the Big Man run around and play (even though they are a little slow about it, getting over this stupid cold).
I did make a recipe this week because I wanted to take something over to our friend so I could make sure she ate something. It is just another muffin recipe. A flavor I have wanted to try for a while. It turned out quite nice, so I hope you enjoy it, if you choose to make it.
In the meantime, I implore you to spend this holiday looking around at what really matters. If you want to spend the money on cards, chocolates and diamonds, please do. But if you don’t want to… Don’t! If St. Valentine’s Day is about LOVE, let it be about LOVE.

Let this day be about love, not things. (Sorry. Another rant because I can’t stand the consumerism of this day. Please forgive me.)
Anyway, on to the Gluten-Free, Almond Flour, Apple Crumb Muffins.
Also, there aren’t many St. Valentine’s Day Cartoons from my childhood, but I loved Be My Valentine, Charlie Brown. I especially loved the part where Snoopy made the super fancy Valentine. If you go to 1:51 into the video below, you can see it.
Gluten-Free, Almond Flour, Apple Crumb Muffins
- 2 cups Almond Flour (Honeyville, packed down)
- 1 tsp Baking Soda
- ½ tsp Sea Salt
- 1 tbsp Cinnamon
- 1 tsp Nutmeg
- 1 Apple (peeled, cored, and chopped)
- ½ cup Applesauce
- 3 Eggs
- ¼ cup Grapeseed Oil
- ½ cup Agave Nectar
- 1 cup Chopped Nuts (optional)
- 1/2 cup Almond Flour
- 1 tsp Cinnamon
- 2 tbsp Agave Nectar
- Preheat oven to 350° F.
- Mix dry ingredients together in a medium bowl. Get out all of the lumps.
- Mix wet ingredients together in large bowl.
- Add the dry ingredients to the wet ingredient bowl for your muffin batter.
- Mix Crumble ingredients in a small bowl.
- Add muffin papers to your muffin tin.
- Pour muffin batter into the muffin papers. It should make 12 muffins.
- Spoon the crumble on top of each muffin. (You will have a lot of crumble, so use as much as is your taste.)
- Pat crumble into muffin batter slightly.
- Bake for 22 – 24 minutes. Check with toothpick for doneness.
