If you read my last post (Go Dairy Free Review and Giveaway), you know that I have gone dairy-free. And, if you didn’t read my last post, well… now you know I have gone dairy-free.

Now, some of you may be thinking to yourselves, “Why do I care?”

Well, I will tell you. Because I was sent a cookbook a while ago about doctoring up basic gluten-free cake mixes to make lots of different creations. I had been putting off making any of the recipes, and hence, doing a review, because we just don’t use cake mixes in general around here. Plus, we have been trying to eat as refined sugar free as possible. Since I bake from scratch, mostly, I have been going refined sugar and grain free. I kinda figured using cake mixes would negate that. (This cookbook is called The Cake Mix Doctor Bakes Gluten-Free. Hence, me using the word doctoring. I don’t usually use that word. Plus, I have now used hence, oops, 3 times. That’s a lot of hences. Moving on…)

And, since going dairy-free. I just assumed that I wouldn’t be able to make anything from this cookbook. Well, you know what happens when you assume…

Anyway, I finally got off my first-part-of-the-word-assume and cracked open this book to see what I could do. (By the way, that was only as far as looking at the book goes. I have had a long convo with my BGFFs (best gluten-free friends) about how I don’t get to be on my first-part-of-the-word-assume anymore, and oh-whoa-is-me, but that’s another story.)

Well, surprise, surprise! There is a dairy-free option for almost every recipe. Who knew? Not me. But, now I do. And, so do you. There is a “dairy-free” box on every recipe page. Granted, there are a couple that say, “Yeah, not gonna happen.” OK, she words it much nicer than that, but you get the idea. And it is only for a couple of recipes.

Plus, there is a handy little notes area on each recipe to write… well, notes.

And the pictures…The pictures throughout the book are black and white on the regular paper, but the pictures at the beginning of the book…Pages of glossy, tempting photos with the recipe page number underneath. Um, that’s just mean. And, I mean that in a good way. Just flip through the first few pages and go, “I want to make that… and that… and that…”

Anne… (oh, yeah. It’s written by Anne Byrn. Guess I should have stated that above. Whoops!) Anne comes up with everything from cakes, to muffins, to cookies, and more. So much to choose from. I made the Peanut Butter cookies. (Pictured above.) I made them with sunbutter and dairy free using Anne’s notes. The Big Man couldn’t stop raving. I had to remind him that they were not sugar-free as he wanted to hoover the plate clean.

And, I also made the Hawaiian Cupcakes. I used the pineapple icing recipe she gives as a substitute for the cream cheese frosting. It was fabulous. I am, obviously, not the best icer in the world, but who cares? They tasted great.

So, what is the deal? I was given this book to do a review, but since we are trying to be as grain-free and refined sugar-free as possible, I am giving it away to one of you beautiful people. It’s not that it isn’t great or that I don’t appreciate it. It is. And I do. But I know it will sit on the shelf and not get the proper use that it deserves. So, out into the universe to get the love it needs.

    Oh do I have to choose just one lets see should I choose carrot, Orange juice cake, CHOCOLATE cake, flour-less chocolate cake, i’m drooling already, Champaign cake, any cake with a gooey filling, ok Ive narrowed it down to the one my eyes keep drawing to………. ORANGE JUICE CAKE.

    I purchased this book before the holidays, and I made the Bacardi Rum cake- my mother in law makes the gluten filled version every year at Christmas, and as this was our (my children and I) first Christmas gluten and dairy free- I wanted to give it a go- WOW! It even passed the mother in law test- she said it was even BETTER than hers, which if you knew her, that is REALLY SAYING A LOT! :0) I have since made many of the recipes in the book (I make gluten/dairy free items for my kids bake sales at their school- lots of kids who are gluten intolerant in their school!) everything I’ve made from there has been a huge hit! (must.stop.making.desserts!) I am not a huge fan of mixes, and prior to our Celiac diagnosis, never purchased mixes- I was always a “scratch” baker- but these recipes rock! (and the betty crocker GF mixes are pretty inexpensive compared to many other gf brands- just sayin’)

  17. Oh, that sounds like a dangerous cookbook to have on hand! Oddly enough, I’m not a big cake fan, but the husband is, and he would loooove for me to make some cupcakes like those.

    My favorite cake EVER was a pink champagne cake with pink champagne icing with those little silver cake deocorating balls as embellishment from a bakery in Des Moines. Delicious! The most creative I ever get is better than sex chocolate cake with Heath Bars and caramel topping but I dream of that champagne cake sometimes! 🙂

    I sure miss the moisture of gluten baking, the dryness can get annoying. Been playing with doctoring things up on my own, some success. I love to bake, that is my favorite cooking method. It has become a very expensive venture! I keep at it though because so many people have happy tummies. 🙂

  31. I also have her original book. Since I was diagnosed with celiac 2 months ago I seriously missed baking something quick and yummy. I’ve had the gluten free version a few weeks and have made the caramel cake with caramel frosting and the banana muffins. Have alot of little bookmarks for things on my to-make list!! My co-workers are getting spoiled !!!!!
