I am so excited! You should be excited, too.

Today, I am reviewing a cookbook (and giving one away) from a friend of mine who happens to be a great gluten-free cook/chef/whatever-you-want-to-call-her. Do you want to know who it is? I know you do.

It’s… Carol! Carol from Simply…Gluten-Free, to be exact. She has a fabulous new cookbook out called, Simply…Gluten-Free Desserts, of course. If you haven’t read her blog, (you should) you will know that she makes lots of things gluten-free, but she happens to be a super-star at desserts. So, this cookbook is perfect for her.

In fact, she can explain how to make a dessert so well that even a novice can make something spectacular. The first time I adopted a gluten-free blogger (great event started by Sea at Book of Yum. I must do it again, soon. Haven’t adopted anyone since all the craziness of a few months ago.), it was Carol. We had talked a bit on twitter, so she was the first person I thought of. I made Gluten-Free, Dairy-Free, “Cream” Puffs. And, as I explained in that post, I am not a baker, let alone a puff-maker. But, I was able to get some good ones, thanks to Carol’s instructions.

And, when Carol sent me this book to try, I was über-excited about what I could make. Since it was coming up on a holiday, I decided to make a couple of things for our 4th of July gathering. I made Carrot Cupcakes (sans frosting) and Black Bean Brownies. You read that right. BLACK BEAN Brownies. Look at the picture! Can you believe there are black beans in there? No grain. Just black beans! And, you don’t taste them either. I think that makes them the healthiest brownies in existence that actually taste like brownies. What the…?!?!?

And the carrot cupcakes? Those disappeared like a shot. No one cared that they were gluten-free. They didn’t have any frosting because we were running late, but I don’t think anyone cared.

And there are 148 more recipes in this book to try. Better get my running shoes out. I’m going to need to run off all of these calories.

Yeah. The only problem with Carol’s book is that she hasn’t found a way to make her desserts calorie-free.

But, trust me, if you are missing great tasting desserts, look no further than Simply…Gluten-Free Desserts.

  74. Carol is a gluten-free dessert genius without a doubt! Those brownies look awesome. I love black bean brownies and I’m sure those carrot cupcakes didn’t need frosting.(I almost never use frosting any more.)     The one recipe that I would try next is the Gluten Free Dairy Free Snickerdoodle Cupcakes. LOVE-LOVE-LOVE this kind of cookie and can only imagine what this will taste like–AWESOME!
